Coconut Chicken

We loved this! Serve it with Tropical Rice.
Serves: 3

  ~ 1 pound boneless chicken breasts
  ~ 1 egg
  ~ 1/4 cup flour
  ~ 1/4 teaspoon salt 
  ~ 1/2 cup bread crumbs
  ~ 1/2 cup shredded coconut
  ~ 1/4 cup vegetable oil

1.  Cut each chicken breast into strips.

2. In one bowl, combine flour and salt. In a second bowl, beat egg. In a third bowl, combine bread crumbs and coconut. Bread each piece of chicken in this order.

3. Place breaded chicken in a pre-heated skillet with the vegetable oil. Fry strips for approximately 6 minutes, making sure each side is browned. Once chicken is done, place them on a paper towel lined dish to drain the oil.
