Broccoli in a Sweet Garlic Sauce

I made this to go with our Chinese New Year dinner last night (Sweet and Sour Chicken). It's delicious, quick and healthy. Can't go wrong. You could also use the sauce with different vegetables. I'm planning on using broccoli and carrots next time.

Serves: 6 

Ingredients:
  ~ 2 cups chicken broth
  ~ 1 clove garlic, minced
  ~ 1/4 cup soy sauce
  ~ 1 teaspoon ginger
  ~ 1/4 cup sugar
  ~ 2 bunches of broccoli, chopped 
  ~ 2 tablespoons olive oil
  ~ 1 1/2 tablespoons cornstarch

Directions:
1.  Bring the broth to a boil in a sauce pan. Add the garlic, soy sauce, ginger and sugar.  Stir well, until combined.

2. In a large skillet, saute the broccoli in the olive oil until just barely tender. Add the broth mixture and cornstarch to the skillet. Be sure to stir very well to avoid lumps (I used a whisk).

3. Allow to cook for approximately 6 minutes, or until the sauce thickens. Serve over rice.
